−ABOUT THE COVER−

An update on food allergy is a highly relevant topic due to the increasing prevalence of these conditions worldwide. This article highlights the importance of the topic in the introduction, reviews the epidemiology that Latin America should consider, and examines the current classification of food allergies and associated risk factors. It provides a comprehensive description of the pathophysiology, including phenotypes and endotypes, and underscores the role of the microbiota.

Various diagnostic methods are discussed, ranging from the simplest to the most complex, with a detailed analysis of multiple diagnostic approaches. The article also explores different current and advanced treatments for food allergies. Finally, it examines the relationship between food allergies and environmental pollution, aiming to cover all aspects of this fascinating pathology.
